Two food trucks have pulled into the same downtown Hutto lot since July. Shelly's Heart and Soul Food moved to 209 Farley St. that month, and Mariscos el Jaguar opened beside it on Oct. 14. A fabric and yarn shop opened a block over on East Street during Olde Tyme Days. A beauty collective set up on Taylor Street in August.
Most of the talk about Hutto's growth centers on the US-79 corridor. That is where the big restaurant announcements and the large employer news have landed. The places you can actually visit this weekend, though, are opening within a few blocks of Farley Street, and they are mostly small, locally run businesses.
One Address, Two New Menus
The Hippo Escape is the food truck court at 209 Farley St. In a December 2023 report, the Taylor Press said owner Enrique Diaz had bought the land that year. He improved the lighting and moved his own truck, La Parrilla LAC, onto the lot, and by then the site had already been a food truck court for several years.
The two newest arrivals have very different menus:
- Shelly's Heart and Soul Food moved from 3333 CR 119 in July. It serves hand-breaded catfish fillets and wings with collard greens, rice and beans, macaroni and cheese, cornbread muffins, fries and grits, according to Community Impact.
- Mariscos el Jaguar opened Oct. 14. It serves Mexican seafood, including aguachile verde, ceviche, tostadas and shrimp tacos, plus mangonadas, fresh juices and horchata. Community Impact reported that the business also has a location in Round Rock.
The lot has been part of the downtown evening crowd for a while. In that same 2023 Taylor Press report, Diaz told the Hutto City Council in November 2023, "We put up a lot of lights in the park and a lot of people come after 8." He was asking the city to let food service run past the 8 p.m. limit that applied at the time. The paper also reported that the Hutto Farmers Market was partnering with the Hippo Escape on weekly Food Truck Friday nights with live music and pop-up markets. That account is three years old, so check each truck's own page for current hours before you head over.
The Shops Filling In Around the Lot
A short walk from 209 Farley St. brings you to the downtown storefronts that have opened or drawn coverage this year. Here they are with the dates Community Impact reported:
| Business | Address | What it offers | Status |
|---|---|---|---|
| Heritage Bloom Fiber Co. | 115 East St., Ste. B | Fabric, textiles, yarn, embroidery supplies | Opened Oct. 10, 2026 |
| Doll House Beauty Lounge | 102 Taylor St. | Beauty collective made up of three businesses | Opened Aug. 3, 2026 |
| Hutto General Store | Downtown Hutto | Sweets and gifts | Storefront dates to 1992 |
Heritage Bloom timed its soft opening to Hutto's Olde Tyme Days Festival. Community Impact reported that founders Noelle Lanz and Michelle Carrera plan to add children's fiber arts classes, skill-building workshops and seasonal events. The shop's own site, heritagebloomfiber.com, is the place to watch for that class schedule.
Hutto General Store gives the newer shops some context. Community Impact's October profile notes that its downtown storefront dates to 1992. This year's openings are joining a downtown that has kept independent retail going for decades.
The City Is Working on the Same Blocks
Public money and public works crews have been busy on these streets too. In September, Hutto Public Works scheduled an overnight restriping of the East Street parking stalls between Hwy. 79 and Pecan Street. That stretch runs right past Heritage Bloom's address.
In August, the city announced that the Hutto Area Chamber of Commerce will have a new permanent headquarters in Historic Downtown. The Hutto Economic Development Corporation bought the Chamber's longtime East Street building. The city's release said timelines and details would come later, so the project has no move-in date yet.
Taken together, Hutto's economic development arm is buying property downtown, the city is repainting downtown parking, and small businesses are filling the storefronts and lots between them.
Out at 79 and 130, the Dates Still Say TBD
The larger names announced for Hutto sit on much longer timelines. Here is where they stood in the most recent local reports:
- LongHorn Steakhouse is planned for the Sprouts development at the Hwy. 79 and SH 130 corner. Community Impact listed its opening date as "TBD" in July.
- Olive Garden is planned for the northeast corner of Hwy. 79 and SH 130. A September Community Impact roundup gave no opening date.
- Crunch Fitness is planned for 320 Ed Schmidt Blvd. Community Impact reported that construction on the 39,992-square-foot space was set to begin in November and run through the end of 2027.
- Cottonwood Marketplace is planned near US 79 and CR 132. The city reports that a site plan has been received, but no tenant names or construction schedule have been released.
The biggest news on the corridor this month was about jobs. On Oct. 8, the City of Hutto announced that Blue Origin had selected an existing facility along Hwy. 79, between Innovation and Alliance boulevards, for aerospace and defense manufacturing and research. The announced investment is $650 million, with up to 2,000 jobs. That is a long-term employment story. The ceviche on Farley Street is available today.
Other New Places Around Town This Fall
A few other recent openings are spread across town:
- Soul Strong Yoga opened Sept. 1 at 531 Ed Schmidt Blvd., Ste. 120. It offers yoga, meditation and Pilates classes.
- Paws Puppy Studio opened Aug. 15 at 128 Little Elm Way. On weekends it runs puppy mindfulness, story time, painting and dance classes, according to Community Impact.
- Hutto Lake Park's sensory-friendly playground, at 805 Estate Drive, had its ribbon-cutting on Oct. 17. Community Impact reported nine sensory-focused play features designed for children of all abilities.
Getting around the east side is also a little easier. Williamson County finished East WilCo Highway Segment 2, which runs from CR 137 in Hutto to CR 404 in Taylor. The connecting Southeast Loop work upgraded the intersections at FM 1660 and FM 3349 and added a signal that is accessible to pedestrians, Community Impact reported.
One Downtown Date for November
The next confirmed downtown event is the city's Veterans Day Celebration on Wednesday, Nov. 11, from 11 a.m. to noon. It takes place at the Veterans Memorial at 500 W. Live Oak St., just east of City Hall, according to the Hutto Parks & Recreation listing. The memorial is a short drive from Farley Street, which makes it easy to pick up lunch at one of the trucks afterward.
At Jorgenson Real Estate, we're a veteran-led brokerage based right next door in Round Rock, and we track Hutto's downtown blocks one storefront at a time.
